About Brinza cheese
Sheep's milk cheese, or brânză or brînză, is a cheese similar to feta which is used extensively in Romanian cuisine. This kind of cheese is popular throughout Eastern Europe and is made from sheep's milk. Brinza is cut into cubes and stored in brine. Maturation lasts four weeks or more, the fat content is around 45%. Similar cheeses are the Hungarian Brynza, Sirene from Bulgaria and Greek feta.
Of Romanian origin, this sheep's milk cheese is cured in a brine. It's creamy, rich and salty, and ranges from soft and spreadable to semidry and crumbly.
