Broiled Chicken with Tkemali Sauce

- Choose a medium-sized chicken.
- Dredge with salt and pepper and skewer diagonally from leg to wing.
- Broil over hot charcoals for 20 to 30 minutes, turning and basting regularly with butter until evenly browned.
- Remove the chicken from the skewer and serve garnished with lettuce, fresh-salted cucumbers and tomatoes.
