Cassoulet Soup

Inexpensive and tasty soup based on a French classic. Fast and easy to make and everyone always loves it.

Ingredients

Procedures

  1. Sauté Onion and Sausage in large saucepan until browned.
  2. Add thyme, stir one minute.
  3. Add wine, boil unitl slightly reduced, about 2 minutes.
  4. Stir in broth, 1 cup of the beans, and the Chicken.
  5. Mash the rest of the beans and add to pot.
  6. Partially cover and simmer for 10 minutes.
  7. Season to taste with salt and pepper, garnish with chopped parsley.
