Chili Lime Pork

  1. Preheat oven to 325°F.
  2. Shake flour in oven bag; place in 13x9x2-inch baking pan.
  3. Combine honey, chili powder and lime peel.
  4. Pat surface of pork dry.
  5. Spread half of chili mixture evenly over bottom of pork.
  6. Add pork to oven bag; spread remaining chili mixture over top of pork.
  7. Arrange sweet potatoes around pork in an even layer in bag.
  8. Close oven bag with nylon tie, cut six ½-inch slits in top.
  9. Bake 1 to 1¼ hours, until meat thermometer reads 160f.
  10. Slice pork; spoon juices over pork before serving.
