Confetti Slaw

Ingredients

• 2 cups shredded green cabbage
• 2 cups shredded red cabbage
• 2 cups peeled, shredded carrots
• 2 cups shredded celery root or daikon
• 1 cup diced red onion
• 1 cup dried currants or raisins
• ½ tsp salt
• ¼ tsp freshly ground pepper

Dressing

• 1 cup soy or regular mayonnaise
• 3 tbsp fresh lemon juice
• 2 tsp prepared white horseradish
• 2 tsp rice vinegar or balsamic vinegar
• 1½ tsp dijon mustard
• 1 small clove garlic, minced

Procedures

Dressing

1. In medium bowl. mix all ingredients until well combined.

Slaw

1. In large bowl, combine both cabbages, carrots, celery root, red onion and currants.
2. Add dressing and toss to coat.
3. Season with salt and freshly ground pepper to taste and serve.
