Corn and Barley Salad
Ingredients
- 1 cup barley
- ⅓ cup oil
- ⅓ cup lemon juice
- ½ tsp salt
- pepper, to taste
- parsley, to taste
- 2 cups corn
- ½ red pepper
- ½ green pepper
- ½ cup green onions
Procedures
- Cook barley and drain.
- Combine with the rest of the ingredients.
- Mix and chill overnight.
