Easy Blueberry Cobbler
Ingredients
- 3 cups fresh blueberries
- vegetable cooking spray
- 1 tbsp lemon juice
- 1 egg, beaten (egg substitute may be used)
- 1 cup all-purpose flour
- sugar substitute to equal 1½ cups sugar
- ¼ cup + 2 tbsp reduced-calorie margarine, melted
Procedures
- Place blueberries in bottom of a 10 x 6 x 2 baking dish coated with cooking spray; sprinkle with lemon juice.
- Combine egg, flour, and sugar substitute; stir until mixture resembles coarse meal.
- Sprinkle over blueberries.
- Drizzle melted margarine over top.
- Bake at 375°F for 30 minutes.
- Serve warm.
