Emeril's Salisbury Steaks

  1. Fry bacon until not quite crisp stage.
  2. With slotted spoon, remove to food processor.
  3. In at least 3 tbsp drippings, saute diced onions until they start to caramelize but not burn.
  4. Add them and drippings to bacon.
  5. Let processor make a paste of this.
  6. Put meat in large bowl with all ingredients.
  7. With hands, work meat together until well blended.
  8. Make oval patties of meat.
  9. Fry on both sides until well browned.
  10. Place in 13x9x2" baking dish.
  11. Put in oven for 30 minutes or until no more pink inside meat.
  12. Cut a small slit in one with sharp knife and very carefully press meat apart a little to check doneness.
