Fat-free Knaidlach

Yield: 10 or so



  1. Beat egg whites until stiff, add beaten yolks.
  2. Fold in matzo meal and salt into eggs.
  3. Bring 4 quarts salted water to a boil.
  4. With moistened hands form balls the size of a walnut and drop into boiling water.
  5. Cover and boil for 20 minutes or longer.
