Description
Fava
-
broad bean
purée
Ingredients
2 cups dried
fava beans
3 cups
water
3 cloves
garlic
(mashed)
2 teaspoons
salt
2 teaspoons
sugar
½ cup
olive oil
½ cup
lemon juice
and
parsley
to garnish
Procedures
Soak dried fava beans overnight then boil in 3 cups of
water
until mushy.
Place fava beans and all the rest of the ingredients in a blender (or mix well by hand) and pour into two deep platters.
When set, cut into squares and serve with and
parsley
as garnish.
