  1. Combine rice, tomatoes, mushrooms, green pepper, onions and parsley in large bowl.
  2. Combine oil, vinegar, garlic, basil, salt and pepper in small bowl.
  3. Pour over rice mixture and toss lightly.
  4. Serve on lettuce leaves.
