Gazpacho Salad Dressing

- This recipe yields about 1 cup of vinaigrette.
Ingredients
- ½ cup reduced-calorie chili sauce
- ½ cup no-salt-added vegetable juice cocktail
- 2 tablespoons red wine vinegar
- 1 tablespoon vegetable oil
- 1 tablespoon lime juice
- 1 teaspoon sugar
- ¼ teaspoon salt
- ⅛ teaspoon hot sauce
- ¼ cup peeled, seeded and chopped cucumber
- ¼ cup seeded, chopped tomato
Procedures
- Combine first 8 ingredients in a small bowl; stir well with a wire whisk until blended.
- Stir in cucumber and tomato.
- Cover and chill thoroughly.
- Serve with salad greens or Mexican salad.
