Gombo Sauce

First stage:

  1. Finely cut the gombos.
  2. Chop the onions.
  3. clean the sheets of keleng keleng.

Second stage:

  1. sauté onions in red palm oil.
  2. add the paste of crushed groundnuts and water.
  3. Mix regularly to prevent stickiness
  4. Add the gombo and the sheets.
  5. Season with salt, pepper and chilli to taste
  6. Let simmer for 20 minutes.

Third stage:

  1. Bring slightly salted water to the boil
  2. Add the cornstarch and mix vigorously to obtain desired consistency.
