Hot Curried Rice and Vegetables
Makes 6 servings.
Ingredients
- 1 clove garlic, minced
- 1 teaspoon curry powder
- 1 tablespoon vegetable oil
- 1 cup chopped carrots
- 1 cup chopped zucchini
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon ground cinnamon
- ½ cup water
- 3 cups cooked rice (cooked in chicken broth)
- ½ cup raisins, plumped
- ½ cup toasted chopped pecans
- 2 tablespoons orange marmalade
- ¼ cup sour cream
Procedures
- Heat garlic and curry in oil in large skillet.
- Add carrots, zucchini, salt, pepper, cinnamon and water.
- Cover; cook 10 minutes, or until vegetables are tender crisp.
- Stir in rice, Raisins, pecans, marmalade and sour cream; heat thoroughly.
