Lobster and Rice Salad

Description

Makes 6 servings.

Ingredients

  • 3 cups hot cooked rice
  • 1/4 cup vinaigrette dressing
  • 2 cups cooked lobster meat cubes
  • 1 cup sliced fresh Mushrooms
  • 1/2 cup red pepper strips
  • 1/3 cup sliced ripe olives
  • 1/4 cup sliced green onions
  • 1 1/2 teaspoons snipped fresh basil leaves
  • 1 teaspoon snipped fresh dill
  • 1 teaspoon snipped chives
  • Fresh herbs (optional)

Procedures

Toss rice with dressing in large bowl; cool. Add lobster meat, Mushrooms, pepper, , onions and herbs; toss lightly. Garnish with additional fresh herbs if desired.
