Mango Ketchup

Ingredients

Procedures

  1. Peel and pit mangos.
  2. Puree pulp in food processor.
  3. Add vinegar, ginger, cinnamon, salt, sugar, wine, allspice, cayenne and clove.
  4. Pulse together.
  5. In a heavy saucepan, cook the mixture over low heat 1 hour until reduced and thickened.
  6. Remove from heat and cool.
  7. Strain through a fine sieve.
  8. Refrigerate 24 hours.
