Mangos Flameados

  1. In chafing dish: melt butter.
  2. When hot add sugar and stir until the sugar has dissolved.
  3. Add orange and lime peels.
  4. Add liqueur and flame.
  5. When the flames have died down, add the orange and lime juices and cook until it has reduced slightly and is just turning brown.
  6. Add the mango halves.
  7. When the syrup starts to bubble, add the tequila and flame again.
  8. Serve immediately, either as is or over ice cream.
