Marinated Herring with juniper berries and Icelandic brennivín-schnapps

Ingredients

Procedures

  1. Heat together the water, vinegar and sugar.
  2. When the water comes to the boil add the crushed juniper berries.
  3. Chill well.
  4. Cut the herring fillets into approximately 2 cm pieces.
  5. Place the pieces in a deep plate and pour the chilled juniper-liquid over.
  6. Give the herring a good dash of schnapps.
  7. Place the onion rings on top and garnish with parsley twigs.
