Moroccan Pumpkin Soup
Description
This sweet soup is gorgeous and really warms you up when it's cold out. This recipe serves 6.
Ingredients
- 2½ pounds orange pumpkin
- 3½ cups chicken stock
- 3½ cups milk
- salt and white pepper
- 2 teaspoons sugar
Procedures
- Peel and deseed the pumpkin and cut it into pieces. Add the stock, milk, salt, pepper, and sugar to the pumpkin in a large pan and simmer for 20 minutes on a medium heat.
- Remove the pumpkin from the mixture and puree it in a blender. Put the puree back into the pan and stir well.
- Bring the mixture to the boil, turning it down immediately. Leave it to simmer for a few minutes more.
- Serve hot.
