Mushroom Egg Foo Yung

Ingredients
- 6 eggs
- 1 cup mushrooms, minced
- 1 cup fresh bean sprouts
- 1 small onion, minced
- salt, pepper
- 2 tbsp butter
Sally's brown sauce
- 1 tbsp butter
- 1 tbsp cornstarch
- 1 tbsp sugar
- ½ cup water
- 1½ tbsp soy sauce
Procedures
- Beat eggs well.
- Stir in mushrooms, sprouts, onion and seasonings.
- Heat butter in skillet.
- Spoon in mixture to form patties.
- Brown on both sides.
- Keep hot in low oven until ready to serve.
- You may like the following sauce to serve over them.
Sally's brown sauce
- Melt butter in pan.
- Mix cornstarch with sugar and blend into butter.
- Add water and soy sauce.
- Cook, stirring constantly until mixture is thickened and bubbly.
