Oven-fried Chicken I

  1. Mix butter, salt and pepper.
  2. Brush chicken with butter mixture, then roll in cornflakes or bread crumbs (you may even use 1 cup crushed potato chips).
  3. Put chicken skin side up without touching in ungreased large shallow baking pan.
  4. Bake at 375 °F until tender, about 1 hour.
  5. Don't turn.
  6. Season to taste with salt.
