Passover Lemon Pavlova

Ingredients

• 1 cup sugar
• 1½ cup water
• ¼ cup potato starch
• 3 yolks
• 1 tbsp margarine
• ¼ cup lemon juice
• 1 tsp lemon extract, optional
• 6 egg whites
• ⅓ cup sugar
• 1 tbsp potato starch

Procedures

1. Whip egg whites with sugar (⅓ cup) and potato starch until very stiff.
2. Boil 1 minute.
3. Add margarine, juice, and lemon extract.
4. Mix until smooth.
