Peanut Ginger Pasta and Vegetable Salad
- 4 oz pasta
- 1 cup mushroom
- 1 cup yellow summer squash
- 2 carrot
- 1 cucumber
- ¾ cup green beans
- 2 plum tomatoes
- Cook pasta, rinse with cold water, drain and put into large mixing bowl.
- Add all cut vegetables except tomatoes.
- Add peanut ginger dressing and toss.
- Add tomatoes and toss gently.
- Serve either at room temperature or chilled.
- Most flavorful if chilled.
