Plum Rice Salad

Makes 6 servings



  1. Combine rice, plums, chives and raisins in large bowl.
  2. Do not mix; set aside.
  3. Combine grape juice, oil, vinegar, honey, ginger, coriander, salt and pepper in small bowl; whisk to blend.
  4. Pour dressing over salad and toss.
  5. Top with bacon.
  6. Serve over lettuce leaves.
