Portuguese Pork Roast

Ingredients

• 1 pork roast
• 1 lb of either a Portuguese sausage or any other
• ⅓ cup of red wine
• 4 large carrots, peeled and cut into large pieces
• 6 medium potatoes, peeled
• 1 large red hot pepper, cut julienne
• 2 cloves of garlic crushed
• 2 large onions peeled and quartered

Procedures

1. In a roasting pan add meat, sausage, wine, garlic, and the red pepper.
2. Add water to the half way point.
3. Cover and bake for 1 to 2 hours at 350°F.
4. Keep an eye on it so it will not dry out.
5. Next add the potatoes, carrots, and onion continue to bake until carrots are tender.
