  1. Preheat a char-grill or BBQ
  2. Combine scallops, coriander, lime juice and olive oil in a bowl.
  3. Thread scallops onto skewers.
  4. Cook for 2-3 minutes, turning and basting until just cooked.
  5. Serve drizzled with sweet chilli sauce.
