Soy whipped cream

• 3/4 C. soy milk
• 2 Tbs. Honey
• 1 Tbs lemon juice (or Vinegar)
• 1/4-1/2 Tsp vanilla
• Pinch of salt (optional)
• 2 cups oil

1. Blend first four Ingredients on high for 5-10 seconds.
2. Slowly dribble in oil
3. Blending for an additional full minute after all the oil has been added.
4. Put into a covered container and chill..
