Steamed Fonio with Okra
- Wash fonio and remove excess water in a kitchen towel.
- Boil water in a couscous pot, add fonio slowly, and cover pot tightly so that steam does not escape.
- Steam 20 minutes.
- Leaving the pot on the fire, remove the fonio, mix with a little water, cover, and let stand for 5 – 10 minutes.
- Return fonio to couscous pot and steam 20 minutes.
- Repeat operations 3 and 4.
- Mix with boiled okra and serve.
