Steamed Fonio with Okra

  1. Wash fonio and remove excess water in a kitchen towel.
  2. Boil water in a couscous pot, add fonio slowly, and cover pot tightly so that steam does not escape.
  3. Steam 20 minutes.
  4. Leaving the pot on the fire, remove the fonio, mix with a little water, cover, and let stand for 5 – 10 minutes.
  5. Return fonio to couscous pot and steam 20 minutes.
  6. Repeat operations 3 and 4.
  7. Mix with boiled okra and serve.
