Sweet Potato Pudding I

Description

Very popular in Zambia and throughout Africa! Quickly and easy!

Ingredients

• 1½ cups of milk
• 1 egg
• 500 g of sweet potatoes
• 3 tablespoon(s) of coconut (grated)
• ½ cup of sugar
• 2 tablespoons of baking powder

Procedures

1. Boil, peel and mash the sweet potatoes.
2. Beat eggs and add sweet potato and other ingredients, mixing thoroughly.
3. Bake at moderate temperature in a greased dish until the surface becomes brown.
