Thai Salad with Pork

- Makes 6 servings of Thai salad with pork.
Ingredients
Dressing
- ⅓ cup smooth peanut butter
- 3 tbsp vegetable oil
- 3 tbsp lemon juice
- 2 tbsp soy sauce
- 2 tsp sugar
- ½ tbsp red pepper flakes
- ¼ tsp garlic powder
- ¼ tsp ground ginger
Pork and salad
- 6 boneless thin cut pork chops
- 2 tbsp soy sauce
- 8 cups shredded lettuce
- 1 cup bean sprouts
- 1 cucumber, peeled, thinly sliced
- 2 red bell peppers, thinly sliced
- 3 scallions, thinly sliced
Procedures
- Heat outdoor grill.
Dressing
- Whisk all ingredients in a bowl until smooth.
- Whisk in ⅓ cup warm water.
- Cover and set aside.
Pork and salad
- Brush chops with soy sauce.
- Grill 4 min.
- Turn and grill until done.
- Set aside and keep warm.
- In a bowl, toss lettuce, sprouts, cucumber, red pepper, and scallions with ¾ cups dressing.
- Place 2 cups of salad on each plate.
- Thinly slice pork, fan slices over each salad.
- Drizzle each with 1 tbsp dressing.
