Thousand Island Rice Salad

Makes 6 servings.
Ingredients
- 3½ cups cooked rice
- ½ cup chopped celery
- ¼ cup chopped green pepper
- 2 tablespoons finely chopped onion
- ¼ cup bottled Thousand Island dressing
- ¼ teaspoon salt
- ⅛ teaspoon ground white pepper
- 2 eggs, beaten
- 1½ cups cottage cheese
- 2 tablespoons grated Parmesan cheese
- 2 cups grated cheddar cheese, divided
Procedures
- Combine rice, celery, green pepper, onion, dressing, salt and white pepper in mixing bowl.
- Serve with cooked crawfish tails or small cooked shrimp.
