Toast Skagen is an excellent party appetizer, popular in Scandinavian cuisine. Although it is named after a fishing port in Denmark, it was actually invented by a Swedish restaurateur Tore Wretman. This elegant starter features mayonnaise-based shrimp salad on the buttered toast, garnished with caviar.

  1. Heat a griddle on medium-high heat. Butter the bread slices on both sides.
  2. Toast on a griddle for 1-2 minutes per side or until the toasts turn golden brown.
  3. Meanwhile, mix shrimp, lemon juice, Mayonnaise, and dill in a bowl.
  4. Top the toasts with the butter lettuce, shrimp mixture (about 4 shrimp per toast) and top each toast a teaspoon of caviar.
