Tropical Fruit Salsa on Ice Cream
Ingredients
- 1 pineapple, peeled and cored
- 1 mango, peeled and cut off the pit
- 1 papaya, peeled and seeds removed
- 1 pint strawberries, stemmed
- 1 small serrano chile, stemmed and seeded
- 1 tbsp brown sugar
- 1 tbsp fresh mint leaves, thinly sliced
- 1 tbsp passionfruit juice
Procedures
- Cut pineapple, mango, papaya and strawberries in a small even dice.
- Finely mince the serrano chile.
- Toss the fruit and chile with the sugar.
- Fold in the mint and juice to coat.
- Chill until ready to serve.
- Serve on top of ice cream.
