Tropical Rice Salad

Makes 6 servings.
Ingredients
- 3 cups cooked rice, cooled
- 2 15-1/4-ounce cans tropical fruit salad, drained
- 1 6-1/4-ounce package miniature marshmallows (about 3-1/2 cups)
- 1 cup sweetened flaked coconut
- 1 8-ounce container lite non-dairy whipped topping
- lettuce leaves
Procedures
- Combine rice, fruit, marshmallows and coconut in large bowl.
- Fold in non-dairy whipped topping.
- Chill for 30 minutes, serve on lettuce leaves.
