Veggie-Bean Sloppy Joes
Ingredients
- 1 medium onion chopped
- 1 medium green pepper chopped
- 3 cups cooked brown rice
- 2 x 16 oz cans Mexican-style pinto beans
- ¾ cup barbeque sauce
- buns, rolls, corn bread - what ever you'd like to put underneath
Procedures
- Saute onions and green peppers until tender crisp.
- Add rice, beans, and barbeque sauce.
- Simmer 10 – 15 minutes until heated through.
- Serve over your choice of rolls/bread.
