Wisconsin-style Maple Bacon Salad Dressing

  1. Stir-fry bacon in a large saucepan until extremely crisp.
  2. Remove bacon with slotted spoon and drain on paper towels.
  3. Pour all of bacon drippings into a glass measuring cup and if necessary, add olive oil to bring the level to ½ cup.
  4. Return to saucepan.
  5. Add onions and garlic and sauté until onions are translucent.
  6. Remove pan from heat and pour in vinegar.
  7. Add maple syrup.
  8. Over low heat, blend mixture with wire whisk and heat until warm.
  9. Whisk in salt, mayonnaise and chives until smooth and blended.
  10. Remove from heat.
  11. This dressing is especially good over spinach or other green salads.
