Yugoslavian Fish Skewers with Serbian Tomato Relish

These skewers are delicious, and a perfect alternative to your meat skewers...and more healthy. Suggested types of to use: halibut, rockfish, snapper or orange roughy. The tomato relish should be refrigerated at least 30 minutes, which is not accounted for below.

Serbian tomato Relish

  1. Core, peel and dice the 2 tomatoes.
  2. Combine tomatoes and all the rest of the ingredients.
  3. Stir until well combined.
  4. Cover and refrigerate for at least 30 minutes.

Fish preparation

  1. Cut fish into 1½-inch chunks.
  2. Mix oil, garlic and pepper.
  3. Add pieces, turning lightly to coat all sides.
  4. Thread fish onto 6 skewers.
  5. Spray broiler rack with cooking spray.
  6. Place skewers on rack 4 to 6 inches from heat.
  7. Broil, turning carefully to cook on all sides.
  8. Cook and turn until lightly browned, about 10 to 12 minutes.
  9. Serve with tomato relish.
