Pedernales River chili
- 1 T. oil
- 1 Medium Onion, Chopped
- 1 T. Minced garlic
- 2 Lb. Lean Ground Beef
- 3 T. chili powder or to Taste
- 1 T. Ground cumin
- 1 T. Dried oregano
- 1/2 salt
- 3 T.hot pepper sauce or to Taste
- 2 Cans tomatoes (16 Oz. Each) Undrained, Broken Up
- 2 Cans red kidney beans (16 oz Each)
Heat oil in Large Kettle Over Medium Heat. Add Onion And garlic. Cook 2 Minutes or Until Onion is Tender. Crumble Meat Into Pot And Cook 5 to 6 Minutes or Until it Looses Its Pink Color. Stirring 2 to 3 Times. Add Remaining Ingredients. Bring to Boil. Reduce Heat. Simmer Uncovered About 50 Minutes Until Slightly Thickened And Flavor Develops. Makes 8 Cups.
