  1. Preheat grill for medium heat.
  2. Prepare 8 pieces of aluminum foil with vegetable cooking spray.
  3. Combine potatoes, green onion, soup, cheese (add bacon and mushrooms at this point if desired) in a bowl.
  4. Season to taste with salt and pepper.
  5. Evenly divide the potato mixture among the squares of aluminum foil.
  6. Dot with butter.
  7. Fold into foil packets, sealing well.
  8. Cook foil packets on the grill 12 – 20 minutes until the potatoes have cooked.
