The Devil's Chili



  1. In a large saucepan, saute onions, garlic, shallot, scallions, and green pepper in oil.
  2. Add water, beans, and seasonings.
  3. Simmer for 1½ hours.
  4. Add tomatoes and tomato sauce.
  5. Simmer for 1 hour more or until fork-tender.
  6. For spicier chili, use 2 or more cloves of garlic.
